What started off as a gas station is now one of Springdale’s best burger spots. Marie Patrick opened shop in 1971, and now her great-granddaughter, Kirby Henderson, carries on the legacy. Kirby didn’t always know she would end up in the family business, or even whether she would stay in Springdale. She found out that Patrick’s Burgers is where her heart is and she wouldn’t have it any other way.
What does Patrick’s Burgers mean to you?
“I grew up here, at this restaurant. My brother and I were always here as kids. There’s so much history to this place and it was such a part of my life growing up. It’s a part of me and important for me to carry on the legacy and keep everything alive.”
Were you close with your great-grandmother?
“I only met her a few times before she passed away. But I only know good things about her. I’ve been told she was a really hard worker and cared a lot. She was also known for being very neat and clean. It was important to her to maintain that professionality.”
Beyond family, what’s your connection to Springdale?
“I was born and raised here in Springdale, and I know almost everyone here. I like that everyone who comes in here knows us and we know them. We don’t have to do a lot of advertising because the whole town has a connection with Patrick’s.”
What else do you like about working at Patrick’s?
“I love that I get to work with my family. I get to see my parents (owners Allen and Jennifer Henderson) every day, which is great. My nephew also works here. He’s a teenager and often with teenagers it’s hard to keep tabs on them, but since he works here I get to spend a lot of time with him, which I love.”
What sets Patrick’s Burgers apart from other burger places?
“We get our hamburger meat fresh daily. We hand-mash our patties. They’re never frozen so they are always fresh. That’s the main difference between us and chains. We also strive to get our produce locally. It’s more expensive, but it’s definitely better.”

Well, I’ve definitely seen some great reviews online! Looking forward, what are your dreams for the business?
“Well, of course, I’d love to see growth. And, possibly a few more restaurants throughout the area. That would be awesome! I’d like us to spread out to Fayetteville or Bentonville – and I’d like to just continue to be a staple here in Springdale. Springdale is getting more and more local businesses, especially downtown. We’re seeing more small businesses popping up, which I think is great.”
